    Roasted Mushrooms, Green Beans, and Onions with Garlic Parmesan Butter

    Roasted Mushrooms, Green Beans, and Onions

    Ingredients

    • 4 ounces Cremini mushrooms,, sliced ½″ thick
    • 8 ounces fresh green beans,, cut into 1 ½″ pieces
    • 4 ounces sliced red onion
    • 1 to 2 Tablespoons olive oil
    • 1 Tablespoon balsamic vinegar
    • 1 Tablespoon soy sauce
    • salt and pepper to taste
    • 1 Tablespoon Parmesan Garlic Butter, see recipe below

    Parmesan Garlic Butter

    • 1 stick (¼ pound) unsalted butter,, softened
    • ⅓ cup finely grated parmesan cheese
    • 2 cloves fresh garlic,, minced
    • 1 Tablespoon finely chopped fresh parsley
    • ½ teaspoon dried basil
    Prevent your screen from going dark

    Instructions

    • Preheat oven to 400°F or preheat grill.
    • Mix all ingredients above except the Parmesan Garlic Butter in a plastic freezer bag or non-reactive container until all the vegetables are well covered.
    • Spread in a single layer on a baking sheet and roast in oven for approximately 15-20 minutes until vegetables are tender. (If cooking on the grill then the cooking time will be less. Use a grill basket and toss the vegetables occasionally.)
    • When done, remove vegetables and place in a medium bowl.
    • Top with 1 Tablespoon of the Parmesan Garlic Butter.
    • Toss and serve immediately.

    Parmesan Garlic Butter

    • Blend all the ingredients and store in refrigerator until ready to use.

    Notes

    Gr8 Tip:
    The Parmesan Garlic Butter can also be used as a topping for grilled or roasted beef as well as a spread for making garlic bread.
