This is a Gr8 side dish to go with any dinner. The roasting brings out the best in is medley of green beans, mushrooms and onions. And the beautiful colors will add interest to your dinner plate!
Roasted Mushrooms, Green Beans, and Onions
Ingredients
- 4 ounces Cremini mushrooms,, sliced ½″ thick
- 8 ounces fresh green beans,, cut into 1 ½″ pieces
- 4 ounces sliced red onion
- 1 to 2 Tablespoons olive oil
- 1 Tablespoon balsamic vinegar
- 1 Tablespoon soy sauce
- salt and pepper to taste
- 1 Tablespoon Parmesan Garlic Butter, see recipe below
Parmesan Garlic Butter
- 1 stick (¼ pound) unsalted butter,, softened
- ⅓ cup finely grated parmesan cheese
- 2 cloves fresh garlic,, minced
- 1 Tablespoon finely chopped fresh parsley
- ½ teaspoon dried basil
Instructions
- Preheat oven to 400°F or preheat grill.
- Mix all ingredients above except the Parmesan Garlic Butter in a plastic freezer bag or non-reactive container until all the vegetables are well covered.
- Spread in a single layer on a baking sheet and roast in oven for approximately 15-20 minutes until vegetables are tender. (If cooking on the grill then the cooking time will be less. Use a grill basket and toss the vegetables occasionally.)
- When done, remove vegetables and place in a medium bowl.
- Top with 1 Tablespoon of the Parmesan Garlic Butter.
- Toss and serve immediately.
Parmesan Garlic Butter
- Blend all the ingredients and store in refrigerator until ready to use.
Notes
Gr8 Tip:
