Creamy Cheesy Broccoli Soup
Dad and I went on our favorite errand and visited, Manassero Farms, our local farm. We stopped there to pick up some of their wonderful strawberries. Yes, it's March here in California and Manassero Farms has the best strawberries around. So beautiful, juicy, and sweet! Look at this beauty!
We brought him home and several of his friends!
While we were there, we grabbed a bag of broccoli and knew exactly what would come of it, Creamy Cheesy Broccoli Soup!
Forget the rest of the errands; we have some cooking and eating to do!
Creamy Cheesy Broccoli Soup
Enjoy the comfort of this Creamy Cheesy Broccoli Soup for lunch, dinner or appetizer. Easy to prepare including many ingredients already in your kitchen.
Servings: 6 servings
Ingredients
- 2 Tablespoons olive oil
- 4 cups broccoli florets
- ¼ cup butter
- 1 ½ cups diced onion
- 1 cup diced carrots
- ½ cup diced celery
- 2 cloves garlic, minced
- ¼ cup flour
- 3 cups cold milk
- 2 cups chicken broth
- 3 cups, plus extra for garnish, cheddar cheese, freshly grated - not already grated cheese from a package
- salt and pepper, to taste
Instructions
- Preheat your oven to 375℉.
- Place the broccoli florets on a rimmed baking sheet.
- Sprinkle the broccoli with the olive oil and toss with your hands. Spread the florets on the pan so that they are in a single layer.
- Bake the broccoli for about 20 minutes until they are just starting to turn brown.
- While the broccoli is roasting, melt the butter in a large soup pot. Add the onion, carrots and celery and sauté until the vegetables are soft (about 5 minutes).
- Add the garlic and continue to sauté for another 2 minutes.
- Sprinkle the flour on the vegetables and continue to stir mixing them with the flour. Let this mixture cook for about 2 minutes while stirring.
- Over medium heat, add the milk about ½ cup at a time and stirring after each addition to combine. Continue until all the milk has been added.
- Add the broth and stir until combined.
- Add the broccoli and simmer the soup for about 10 minutes stirring occasionally.
- Add the cheese and stir until completely melted.
- Season with salt and pepper to taste.
- If desired garnish with grated cheese.
