Instructions
First chill the cocktail glasses by putting some ice and a little water into each glass. Set aside while you prepare the beverage.
Put the lime juice and sugar (or simple syrup) into a cocktail shaker (without ice to start) and stir until all the sugar is dissolved.
Next, fill the shaker with ice, then add the rum. With the lid on the cocktail shaker, shake, shake, shake until the drink is chilled.
Take the glasses and pour out the ice and water, then strain the Daiquiri into the chilled glasses. If you prefer, this can also be served over ice in a highball glass.
Garnish with a slice of lime.
Cheers!
Simple Syrup
Put the sugar and water into a small saucepan over medium-high heat.
Stir while heating.
The syrup is done when all the sugar is dissolved and the liquid is fairly clear.
Remove from heat and cool.
Notes
Gr8 Tips:
Bacardi garnishes their Daiquiri with a mint leaf if you prefer.
The reason for using extra-fine granulated sugar is that it will dissolve more quickly than regular granulated sugar. If you only have regular sugar, you can use it, but may have to stir it for longer to get it to dissolve. Or, for a simple hack, you can put the regular sugar in a mini food processor and pulse it a few times to make it finer!
Gr8 Do Ahead Tip:
The Simple Syrup can be stored in the refrigerator in a tightly sealed container for up to 2 weeks.
