Macadamia Nut Crusted Mahi Mahi

This Macadamia Nut crusted Mahi Mahi is easy to prepare and the perfect recipe for lunch or dinner! Add a side salad for a light meal.

Ingredients

  • 1 ½ cups macadamia nuts, toasted, See Gr8 Tip below
  • ¼ cup unsalted butter, softened
  • ½ cup panko, Japanese-style bread crumbs found in your local grocery store
  • 2 Tablespoons all-purpose flour
  • Olive oil for brushing the foil
  • 4 (6 to 8 ounce) Mahi Mahi fillets
  • Kosher salt and freshly ground pepper
  • 2 Tablespoons milk

Instructions

  • Preheat oven to 425°F.
  • In a food processor, process the nuts until coarsely ground.
  • Add the butter to the nuts in the processor and mix just enough to combine.
  • In a medium bowl, stir together the nut mixture, panko, and flour, and set aside.
  • Place a piece of aluminum foil on a baking sheet and brush it with the olive oil.
  • Sprinkle both sides of the mahi mahi with salt and pepper and then place the fish on the foil.
  • Bake for 5 minutes.
  • Remove the fillets from the oven and brush the top of each with the milk to moisten.
  • With your hands pat the nut mixture onto the top of each fillet.
  • Bake the fish for another 5 to 10 minutes and until the crust is golden brown.
  • Serve and Enjoy!

Notes

Gr8 Tip:
If you buy raw macadamia nuts and want to roast them at home:
  • Preheat oven to 325° F.
  • Line cookie sheet with parchment paper or aluminum foil (optional).
  • Toast nuts for 10-12 minutes, or until lightly browned.
Gr8 Make Ahead Tip:
The nut mixture can be prepared up to about 4 hours ahead of time.  Process steps #1 through #4 and set aside until ready to add to the fish.
