Coconut Lime Cilantro Rice

- 1 ½ cups long grain Jasmine rice
- ¾ cup coconut milk, not coconut water
- 1 ½ cups water
- ½ teaspoon white sugar
- ¼ teaspoon salt
- ¼ cup finely chopped cilantro leaves
- 1 - 2 Tablespoons fresh lime juice, adjust to your taste
Prevent your screen from going dark
In a medium saucepan over medium heat, combine the rice, coconut milk, water, sugar and salt.
Cover saucepan and bring to a simmer. Turn heat down to medium-low.
Cook until all liquid has absorbed, about 15 minutes.
Remove saucepan from the heat and let rest, still covered, for 10 minutes.
Fluff rice.
Add chopped coriander (cilantro) and lime juice. Adjust seasonings.
Serve!

Gr8 Do-Ahead Tip:
Prepare the recipe through Step 5, put the rice in a bowl, cool and cover with plastic wrap. To warm up, mist with water. Then continue with Step 6.

A healthy option: Substitute brown rice for the Jasmine rice; though the brown rice may need to cook longer.
