Coconut Lime Cilantro Rice

  • 1 ½ cups long grain Jasmine rice
  • ¾ cup coconut milk, not coconut water
  • 1 ½ cups water
  • ½ teaspoon white sugar
  • ¼ teaspoon salt
  • ¼ cup finely chopped cilantro leaves
  • 1 - 2 Tablespoons fresh lime juice, adjust to your taste


  • In a medium saucepan over medium heat, combine the rice, coconut milk, water, sugar and salt.
  • Cover saucepan and bring to a simmer. Turn heat down to medium-low.
  • Cook until all liquid has absorbed, about 15 minutes.
  • Remove saucepan from the heat and let rest, still covered, for 10 minutes.
  • Fluff rice.
  • Add chopped coriander (cilantro) and lime juice. Adjust seasonings.
  • Serve!

Gr8 Do-Ahead Tip:

Prepare the recipe through Step 5, put the rice in a bowl, cool and cover with plastic wrap. To warm up, mist with water. Then continue with Step 6.

Gr8 Tip:

A healthy option: Substitute brown rice for the Jasmine rice; though the brown rice may need to cook longer.
