Sweet Potato Squares with Lemon-Garlic Mayonnaise

This hearty appetizer is easy to prepare and perfect for any time of the year especially during the holidays!

Ingredients

Sweet Potato Squares

  • 2 pounds sweet potatoes, peeled and cut into 32 (1") cubes
  • 1 Tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ½ pound smoked sausage, cut into 32 (½") pieces
  • 32 wooden sticks

Lemon-Garlic Mayonnaise

  • ½ cup mayonnaise
  • ½ cup sour cream, or plain yogurt
  • 2 Tablespoons chopped fresh flat-leaf parsley, and extra for garnishing
  • 1 teaspoon lemon zest
  • 1 ½ Tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • ½ teaspoon dijon mustard
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon salt
  • ½ teaspoon pepper

Instructions

Sweet Potato Squares

  • Preheat oven to 425F.
  • Place sweet potato cubes on a baking sheet (use parchment paper if you wish). 
  • Toss the potatoes with the olive oil and place them in a single layer. Sprinkle the potatoes with the salt and pepper.
  • Bake the potatoes for 10 minutes and then toss them with a spatula. 
    Bake them for 8 minutes more in a single layer. 
  • While the potatoes are baking, cook the sausage slices in a skillet over medium heat turning once until the sausage is golden brown on both sides (about 3-4 minutes on each side).
  • Drain the sausage slices on paper towels to remove excess oil.
  • Place a potato square on each sausage slice and hold each together with a wooden pick (adding parsley is optional).
  • Serve with Lemon-Garlic Mayonnaise.

Lemon-Garlic Mayonnaise

  • Stir together all ingredients.
  • Store in an airtight container in refrigerator up to 7 days.

Notes

Gr8 Do-Ahead Tip:

  • All steps above can be prepared ahead of time and refrigerated until time to serve.  Before assembling, warm the potatoes and sausage a bit in the microwave or assemble and serve at room temperature.
  • Lemon Garlic Mayonnaise can be made 7 days ahead of time and tightly stored in the refrigerator.
