Blue Cheese Pear Dip

This Blue Cheese Pear Dip is the perfect mildly sweet and savory dip to pair with veggies, fruit, bread or use it as a salad dressing!

Ingredients

  • 4 ounces canned pears in syrup, drain pears and keep the syrup; dice the pears
  • 3 ounces crumbled blue cheese, stilton, gorgonzola or roquefort can be used
  • ½ cup light sour cream
  • ½ teaspoon salt
  • 1 teaspoon fresh lemon juice
  • ¼ cup chopped walnuts, optional
  • fresh veggies, fresh fruit, baguettes, crackers, optional to serve the dip with

Instructions

  • Drain and chop the canned pears saving the syrup. Set aside.
  • Combine all ingredients except the nuts in a mini food processor and mix until smooth. For added sweetness, add syrup a little at a time.
  • Chill for at least one hour and up to one day.
  • If desired, sprinkle with chopped walnuts before serving.
  • Enjoy with fresh vegetables or sliced fruits or toasted baguette. OR, thin it with some of the syrup from the pears and use it as a salad dressing!
