Granola, the Perfect Snack!

This is one of those recipes that you'll be happy makes alot! Grab a baggie and fill it up! It's the best snack to have on hand in your purse, carry-on or at your desk!

Ingredients

  • ½ cup vegetable oil
  • ½ cup mild honey , or maple syrup
  • 1 cup raw wheat germ
  • 1 Tablespoon pure vanilla extract
  • ½ teaspoon salt
  • 3 ½ cups old-fashioned oats
  • 1 ½ cups chopped mixed nuts,, almonds, walnuts, and pecans
  • 2 cups mixed dried fruit, cranberries and raisins or other dried fruit

Instructions

  • Preheat oven to 375°F with rack in the middle of the oven.
  • Thoroughly combine the oil, honey, wheat germ, vanilla, and salt in a large bowl.
  • Stir in oats and nuts.
  • Transfer granola to an uncreased metal baking pan (the one I use is about 9"x 12" with a 2" rim).
  • Bake 15 minutes, then stir and continue to bake. Check and stir every few minutes, rotating pan, until golden brown and then bake about 10 minutes more. It will seem a little soft, but becomes crispy and crunchy as it sits.
  • Take out of the oven and stir in dried fruit and cool to room temperature.
