Place sweet potato cubes on a baking sheet (use parchment paper if you wish).
Toss the potatoes with the olive oil and place them in a single layer. Sprinkle the potatoes with the salt and pepper.
Bake the potatoes for 10 minutes and then toss them with a spatula. Bake them for 8 minutes more in a single layer.
While the potatoes are baking, cook the sausage slices in a skillet over medium heat turning once until the sausage is golden brown on both sides (about 3-4 minutes on each side).
Drain the sausage slices on paper towels to remove excess oil.
Place a potato square on each sausage slice and hold each together with a wooden pick (adding parsley is optional).
Serve with Lemon-Garlic Mayonnaise.

Store in an airtight container in refrigerator up to 7 days.

All steps above can be prepared ahead of time and refrigerated until time to serve. Before assembling, warm the potatoes and sausage a bit in the microwave or assemble and serve at room temperature.
